Carnitas

Our anniversary is May 5, Cinco de Mayo. I was still doing the whole 30 diet so we had a nice dinner at home with our kids. These carnitas were awesome. I’m not even sure how to tell you and they were so easy! The night before you want them, smother it with salt. Seriously smother it. Turn the crock pot on low and let it cook for 16-18 hours. Sounds like too long right? Its perfect. If your meat finishes before you need it turn it to warm until you are ready for it. Don’t shred it in the juice in the crockpot it could turn the meat too salty. Take it out, let it rest and shred it on a plate. I promise you, it will basically fall apart. 

Now, if I hadn’t been doing the diet I would have had a freshly cooked tortilla, blacks beans, cilantro lime brown rice and cheese on it. Instead, I baked cabbage in thick slices with salt and pepper and drizzled with olive oil. It was tasty.
